Bricktown Brewery is set for a top-to-bottom renovation. The ownership group, Edmond-based Enduring Brands LLC, has plans to freshen up the decor and menu while continuing to brew exclusive beers.

Bricktown Brewery is set for a top-to-bottom renovation. The ownership group, Edmond-based Enduring Brands LLC, has plans to freshen up the decor and menu while continuing to brew exclusive beers.
A
new logo is in the works, which will adorn the water tower on the
restaurant and bar's building. At the main entrance, a new awning will
be installed, in addition to a refurbished staircase and ramp. The
owners plan to close certain areas of the brewery as interior
renovations are completed. Work began this month.
To head up the
kitchen, owners have hired Ron Charlton to create a new menu. Trained at
the Culinary Institute of America in New York, he has been a chef and
restaurant owner in Colorado for more than 15 years.
Brewmaster Mark Carter
will remain, and plans to reformulate the hand-crafted beers, while
creating five to eight new ones. Carter came on board in 2002 and was
trained as a brewer’s assistant. Since 2006, he has been the on-site
brewmaster.
County records show the 13,000-square-foot building, 29 E Sheridan Ave., was constructed in 1920. In 1996, it sold along with several neighboring buildings for $10.9 million. In March, it was purchased by BTSQ Holdings LLC for $1.2 million. Jim Cowan first opened the brewery in 1992 and sold it in 2007 when he took over as executive director of the Bricktown Association.
